Early Tree Tapping

ATHENS– Maple syrup season usually starts about three weeks from now.

But this unusually warm weather has maple sap flowing and maple syrup producers hard at work.

The early start has potential for a great season, but that’s mixed with concern for producers.

  1. This posting brought back memories of the years when my friend and I ‘tapped’ Birch trees in Northern Alaska. The finished Birch syrup added great flavor to our morning pancakes. The down side of course was that it took many gallons of raw liquid to make a bottle of syrup. Thanks for bringing those old memories to the surface.

    • I had never seen someone tap trees for sap before. It’s definitely a lot of work, but hopefully that makes the syrup that much sweeter.
